Here is a recipe for a super delicious, simple, easy, oven baked, vegan, plant-based, onion and garlic free - burger recipe.
Ingredients | |
200 ml red lentils | |
400 ml water | |
1 capsicum, red or yellow | |
1/2 of a large carrot or 1 small | |
3 cm square piece of celeriac or kohlrabi or 3 small spring onions | |
1/2 - 1 red chilli, fresh | |
3 tbsp apple cider vinegar | |
2 tbsp soya sauce | |
1 1/2 tsp smoked paprika, sweet | |
1 tsp smoked paprika, spicy | |
1 1/2 tbsp jaggery - You can use other sweetener (coconut sugar, raw cane sugar) if you don't have jaggery. | |
100 ml water | |
100 ml organic flour | |
50 ml ground flax | |
100 ml oats | |
100 ml sunflower seeds | |
50 ml sesame seeds |
Method: | |
1) | Rinse the red lentils and bring to boil in a saucepan - Once boiling cover with a lid and let it simmer for 10 minutes. Turn off the heat and let it sit until you are ready to use. |
Finley chop the capsicum, carrot, celeriac and chilli | |
2) | Heat a frying pan with a little bit of oil - Sauté the capsicum, carrot, celeriac and chilli on a high heat, until til nicely browned and soft. |
Add vinegar, soya sauce, paprika and jaggery to the pan. Stir for about 30 seconds and then take off the heat. | |
3) | Roughly chop sunflower seeds |
4) | In a bowl mix spiced veggie mixture, cooked lentils, water, flour, flax, oats, sunflower seeds and sesame seeds |
5) | Turn the oven to 180 degrees C and let the burger batter stand in the fridge for 10 minutes or until the oven is ready. |
6) | Line a tray with baking paper, brush with oil. Shape the patties. Plae in the oven and bake for about 15-20 minutes - Flip and bake for another 10-15 minutes. |
Enjoy with a ciabatta roll, with salad, tomato, avocado, mustard and Home-made Vegan Mayo. Serve with homemade sweet potato chips.
