Vegan Frikadeller

Let's get cultural with one of Denmark's favourite dishes: Frikadeller. This recipe is handed over to me from my friend, it's completely veganlydelicious. These are super easy and after one go, you'll master the recipe. It has become a weekly favourite with us. We use it for sandwiches, burgers, salads and quick snacks on the go.

 

Ingredients
200 ml red lentils, rinsed
100 ml pumpkin seeds, chopped in a mix of fine and rough, to give texture and bite
100 ml oats
100 ml flour (white flour, wholewheat flour, spelt or oat flour)
100 ml water

4 spring onions, finely chopped

3 tsp madras curry powder
1 tsp salt
3 tsp paprika
1 tsp garam masala
2 tbsp lemon juice
1 tbsp Soya sauce
 Black pepper

 

 

Let's do it
1) In a small sauce pan, place rinsed red lentils and water. Bring to boil. Once boiling add a lid and let simmer for 10 minutes. After 10 minutes remove from heat. Let it rest while you get the rest of the ingredients ready.
2) Add the hot lentils to a bowl with the fresh chopped spring onions.
3) Add everything else mix, mash and fold
4) Let the lentil mixture rest in the fridge 10-15 minutes* - it may seem a bit wet, but trust me, it's perfect for moist and tasty patties.You can leave the batter for longer if you need.
5) When you are ready, head a frying pan with a dash of oil. Dunk a serving spoon of the pattie-batter onto the pan. No need to shape them. They will all come out beautifully different, like us.

 

 

Serve with olive bread, tofu Caesar salad and asparagus. 
If you are on a roll make green peas frikadeller as well.

*Pep it up and change with different spices.
