The Best Vegan Breakfast - Raw Granola

This has been our go-to breakfast for almost a year now. We used to very much be porridge heads and I guess we still are in some ways.  This delicious simple to make healthy Raw Vegan Breakfast Granola is AMAZING. It is super quick to make, fresh and perfect to power you to lunch and beyond. YUM!

   Ingredients Granola:
1 + 1/2 cups - Oats (use gluten-free if desired)
7 -  Dates
3 tbsp - Sunflower Seeds
2 tbsp - Almonds
2 tbsp - Desiccated Coconut
2 - Apples or Pears 
 Ingredients Almond Milk:
3 tbsp - Almonds
2 + 1/4 cups - Water

3 - Dates

 

 Method:
1) Place all of the granola ingredients except the apples and coconut into a high-speed blender. (If you don't have a blender you can chop everything by hand and it is equally as delicious ). Pulse the blender on the highest setting 5-7 times until the nuts and dates are nicely chopped.
2) Remove from blender and pour into a large mixing bowl. Core both of the apples and grate one of the apples and slice the other apple.
3) Place the grated apple and coconut into the bowl with the granola mixture and mix well using your hand to clump and press the mixture until it becomes granola like. (the natural juices in the apples enables granola like formations that are super delicious!)
4) Place almond milk ingredients into the blender jug and blend on highest setting until smooth (We prefer our nut milks unstrained but if you like you can stain the milk). If you don't have a high-speed blender you can either use a stick blender or shop bought nut milks.

Bring It Together!

Gently pour almond milk and place the chopped apple into two bowls (saving some milk for seconds). Top with the delicious granola mixture and ENJOY!

*Tips!

You can swap the apple for any of your favourite fruits. In the summer we love to use fresh raspberries. Pear is also a winner (grating 1 pear instead of apple). Get creative!
