Epic Plant-Based Gluten-free Cookies - 10 minutes mix!

Uh! When you just need a sweet treat that is good for body and mind I whip up these cookies in 10 minutes. They are so easy and SO good! The recipe is always on my wall so I am ready to bake!

When friends and family pops by spontaneously I often bake these as it is so nice to sit and share a treat and a tea. Everybody loves them! It’s time to share the recipe with you!

 

 

Epic Plant-Based Gluten-free Cookies - 10 minutes mix!

 

All you need:

Makes around 10 cookies depending on the size you like them to be.

 

55g coconut oil

130g mega soft dates (weighted with stones)

150g gluten-free oats

50g almonds

a pinch of salt

1 tsp cinnamon, cardamom or vanilla.

50g dark chocolate, roughly chopped

 

This is how you get ready to bake:

1) Remove the stones from the dates and add dates with coconut oil to a saucepan. Melt and mash the dates into the coconut oil. 

2) Separately, blend oats, almonds, salt and your preferred spice into a flour.

3) Mix the date, coconut oil mixture with your spiced oat and almond flour.

4) Lastly fold in the roughly chopped dark chocolate. You are welcome to add more if you fancy.

5) Now shape those delicious cookies, and give the dough a little taste! (Best thing about making plant-based cookies is that the dough is safe to eat! It can also be an issue, as the dough is so good that its easy to eat it all! But hold back! Baked as cookies this dough is even better!)

Now! Ready To Bake!

Use oven setting bottom and upper heating (no fan). 180c. Bake these delicious cookies for 12 minutes. They will be soft when you remove them from the oven. Let them cool or eat warm with a spoon. 

TIPS:


Instead of or as well as dark chocolate you can also add your favourite nuts or seeds (give them a chop as well). Like pecans, walnuts or sun flower or sesame seed. The recipe is incredibly versatile. You can also add a little more coconut oil, like 5-10g and a tbsp or two of cacao powder if you wish for more chocolate flavour.
