Easy Vibrant Vegan Quinoa Salad
We are in Spain surrounded by mountains.
Here grow the creamiest organic AVOCADOS and sweetest TOMATOES. They are super fresh, local and cheap.
|1 cup of quinoa|
|2 cups of water|
|1 vegetable stock cube|
|An assortment of your favourite veggies. We use cherry tomatoes, cucumber, grapes, spinach and avocado.|
|Nuts are great to for some crunch. We use walnuts.|
|A drizzle of olive oil|
|Himalayan rock salt to season|
|Lets do It|
Wash quinoa well. Bring water, stock and quinoa to boil. Place a lid on the saucepan, let it simmer for 20 min
|2)||Toast the nuts in a skillet with a pinch of Himalayan rock salt|
|3)||Chop your veggies with a smile|
|4)||Finish with a drizzle of olive oil and season with Himalayan rock salt|
