Vegan Banana Bread -Refined Sugar Free
Our flatmate loves bananas and somehow we always end up with a house full of bananas.
We freeze them for ice-cream, we blend them for smoothies, we very rarely batter them and fry them, but we do, we make pancakes, cakes, we slice them and dress them with peanut butter, make Summer fruit salads, and this banana bread.
I have been mixing up this bread a lot and I am getting so good at it. In no time it's in the oven and filling the house will lovingly warming smells.

Ingredients: | |
3 Ripe Bananas | |
240 ml Coconut Milk | |
1 Chia Egg | |
3 tbsp Coconut Oil | |
60 ml Jaggery | |
3 tbsp Ground Flax | |
1 tsp Cinnamon | |
A Pinch of Cardamom | |
120 ml Oats | |
120 ml Wholewheat Flour | |
120 ml White Flour | |
3.5 tsp Baking Powder |
Method: | |
1) | Turn the oven on 170 degrees Celsius and prepare a bread tin by lining it with baking paper and oil the sides. |
2) | Melt the coconut oil. |
3) | Mash the bananas, add coconut milk, chia egg, coconut oil, jaggery, ground flax, cinnamon and cardamom. Mix well, but gently. |
4) | Add oats, wholewheat flour, white flour, baking powder and fold together. |
5) | Pour into a baking tray, smooth the surface with a spoon and place in the oven for 60 minutes, until golden brown on top and a skewer comes out clean. |
