100% Vegan Rich Chocolate Mousse

 

Vegan Rich Chocolate Mousse

Avocado. Chocolate. I need say no more.

 

Serves 3 - Or maybe just you!

Ingredients
2 avocados
 2 tbsp maple syrup
125 g dark vegan chocolate
1 tbsp coconut oil

 

 

 Let's do it
1) Scoop the avocado into a small blender. Add maple syrup. Blend till smooth and creamy texture. When smooth keep on going 1-2 minutes more to get it airy.
2) In a saucepan add water and bring to boil. In a heatproof bowl add coconut oil and chocolate. Place the bowl on top of your saucepan, heating the bowl with the steam, let there be gap between water and bottom of bowl. Stir as your chocolate slowly begins to melt.
3) When melted. Gently fold the avocado into the chocolate using a wooden spoon or spatula.
4) Divide the mouse in two or three serving glasses/bowls. Leave them to cool set in the fridge for at least an hour.
