Super Lemon Sugar-Free Vegan Gluten-Free EASY TO MAKE Cookies.

This is all you need:

Wet ingredients
Zest from 1 organic lemon
Juice and pulp from 1 organic lemon (2.5-3tbsp)
2 tbsp chia seeds
130 g soft dates (weight with pips)
4 heaped tbsp coconut oil
Dry ingredients 
130 g almonds, ground into flour (or use 130 g shop bought almond flour)
130 g oats, ground into flour (or use 130 g shop bought oat flour)
1 tsp baking powder
A pinch of salt

And this is how easy it is:

1 - In a small bowl mix together lemon zest, juice and pulp with chia seeds. Set aside.
2 - In a small saucepan, over medium heat, combine de-pitted dates and coconut oil. Stir and mash the dates.
3 - In a bowl combine all the dry ingredients.
4 - Pour all the wet ingredients into the dry (dates, coconut oil and chia lemon mix). Combine to a sticky dough. If the dough is to wet, add a little more flour of your choice. If the dough is to dry, add a little more oil.
5 - Set in the fridge to cool until the oven is ready. (You can prepare the dough before and leave in the fridge for up to 6 hours).
6 - Make round dough balls, place on a baking tray with baking sheet. Press the cookies flat with a fork. Bake for 10-12 minutes at 180 Celsius fan. The cookies are done once they are slightly brown around the edges.
7- Let them cool on a rack. The cookies are soft as they come out, be careful during transfer. They will harden as they cool, leaving them crunchy on the outside and gooey on the inside.
