Many have asked us what food we miss the most after going vegan. When we say that we don’t miss anything, many don’t believe it. Now bring to mind a food item you don’t eat. Maybe because you don’t like the flavour of it or perhaps it is the texture. Let’s say you thought about a banana. If someone came up to you and asked you what you miss the most about bananas, what would your reply be? Well, nothing. You are free to eat a banana, but you choose not to. If you missed the banana you could just eat a banana, right?
That is exactly how we feel about the way we eat. I am not restricted by a vegan diet, there aren’t things I am not allowed to eat, but there are things I choose not to eat for various reasons. If I missed these items I would go ahead and eat them, but I don’t miss meat, eggs or milk. For sure, I used to eat them, and the flavour soothed my tastebuds 7 years ago. But is a taste everything? QUICK AND EASY BEST VEGAN Spaghetti Carbonara
All you need for 4 people: |
- Your favourite spaghetti (CHOICE IS FREE: wheat, gluten-free or made from BEANS!) |
- 1 cup frozen/fresh green peas |
- 2 cups frozen spinach (preferably whole leafed spinach) - You can also use fresh spinach! |
- 200 g mushrooms (sliced and fried) |
If you are feeling fancy you are welcome to add:
- Bacon-style Rice paper or
- 200 g Sliced and plan fried tofu or
- 1/2 a small broccoli chopped into bite-size pieces and pan-fried.
For the Sauce: |
- 1 cup cashews |
- 1/4 stock cube |
- 2 tbsp nutritional yeast |
- 1-2 tbsp lemon juice |
- 3 tbs olive oil |
- 3/4 - 1 cup water cup of water |
- 1 tsp cayenne pepper |
- 1 tsp turmeric |
- Salt and black pepper |
